Beef Spinach Hot Dish

I am loving that my kids are pleased with all of the new recipes that I have been making...even the very youngest :) This is a recipe I made last week and have taken a while to put up. Will try to get on the ball more!

Beef Spinach Hot Dish

Ingredients:

1 lb ground beef
1 medium onion, chopped
2 garlic cloves, minced
1 can (4 oz) mushroom stems and pieces, drained
1 tsp salt
1 tsp dried oregano
1/4 tsp pepper
2 packages (10 oz each) frozen chopped spinach, thawed and squeezed dry
1 can (10 3/4 oz) condensed cream of celery soup, undiluted
1 cup (8 oz) sour cream
2 cups (8 oz) shredded part-skim mozzarella cheese, divided

Directions:

In a large skillet, cook beef, onion and garlic over medium heat until the meat is no longer pink; drain. Stir in the mushrooms, salt, oregano and pepper. Add the spinach, soup and sour cream. Stir in half of the mozzarella cheese. 

Transfer to a greased 2 qt. baking dish. Bake, uncovered, at 350F for 15 minutes. Sprinkle with the remaining cheese; bake 5 minutes longer or until cheese is melted.

Ratatouille Pasta Salad

This was a nice change up for a pasta dish. Very quick and simple...oh and tasty!

Ratatouille Pasta Salad

Ingredients:

1 lb Spaghetti
Zucchini
Tomatoes
Bottled Vinaigrette
Dried Basil
Grated Parmesan

Directions:

Slice Zucchini and Tomatoes into chunks. Toss with cooked spaghetti, vinaigrette and dried basil. Sprinkle with grated Parmesan cheese.

Rosemary Ham with Apples

 
This was a wonderfully warm meal that wafted the yummy scent of rosemary throughout the house :) A perfect fall dish, but I just felt like some comfort food in the middle of this snowy winter day in :) Enjoy!
 
Rosemary Ham with Apples
 
Ingredients:
 
2 Tbs. olive oil
1 1/4 tsp crushed dried rosemary
1 tsp. onion powder
3/4 tsp salt
1/2 tsp pepper
2 1/2 lb cooked ham
2 Tbs honey
1 Tbs + 1 tsp Dijon mustard
1 1/2 lb apples, cored, cut into wedges
 
Directions:
 
Preheat oven to 350F. Coat roasting pan with cooking spray. Combine 1 Tbs oil, 1 tsp rosemary, onion powder, 1/2 tsp salt and 1/4 tsp pepper. Brush onto ham and place in pan. Bake for 1/2 hour.
 
Meanwhile, combine honey and 1 Tbs mustard; reserve. In large bowl, toss apples with remaining 1 Tbs oil, 1 tsp mustard, 1/4 tsp rosemary, 1/4 tsp salt and 1/4 tsp pepper; add to roasting pan around pork at end of 30 minutes. Brush ham with reserved honey mixture and bake for 10 minutes longer. Serve with apples and pan drippings.

Chips and Fish

Now, this recipe, had an awesome citrus burst to it...inside and out. Have a family member that is not a huge fish fan and swears they will only eat seafood if it doesn't taste anything like seafood? I have succeeded!! A definite keeper!

Chips and Fish

Ingredients:

3 to 4 fish fillets, rinsed, dried
1 cup mayonnaise
2 tablespoons fresh lime juice and lime wedges
1 1 /2 cups crushed corn chips

Directions:

Preheat oven to 425F. Mix mayonnaise and lime juice. Spread on both sides of fish fillets.
Place crushed corn chips on wax paper and dredge both sides of fish in chips. Shake off excess chips.
Place fillets on foil-covered baking sheet and bake for 15 minutes or until fish flakes. Serve with lime wedges.
